Dinner: Lemon Pepper Tilapia

I was feeling completely drained and did not feel like cooking at all. But since we want to live, there needed to be some food. So I decided to cook some fish, because its EASY.

This came out so moist, and so tasty. It was simple and light, but still had an impact. I added some spinach and sauteed it in the same pan as the fish. This was a pleasant treat. I did not follow a recipe for this, I kind of did my own thing.  But here is an actual recipe of the same exact thing.
1 teaspoon butter
1 tablespoon oil
4 tilapia fillets
lemon pepper seasoning
salt

Directions:

1 .In a large frying pan, melt butter on a med heat.
2 .Add oil.
3 .Put fish in pan.Season with lemon pepper and salt.
4 .Turn in 3 minutes and season other side, cook for 4 more minutes.
5 .Serve.

Faux Kolacky!!!

The other day people were coming over and I had to scramble because there was nothing to serve with chai (tea). So I went to Walmart and picked up "Raspberry Kolackys". They were pretty, cheap and looked like they would go well with chai. One guest made a comment, these are so delicious, how did you make them, I want to know. I was kind of embarrassed and said.."WALMART".

Those Kolackys were still on my mind days later. Looking in my freezer I found some puff pastry sheets and I already had jam, then I thought why not.

Here are the results of a lingering dessert stuck in my mind for way too long.

Strawberry Jam and Marmalade- Stored in the recycled store bought container.
Icing makes all things pretty.

These turned out quite lovely and almost reminded me of a danish. Very tasty. One day I will make the real deal from scratch.

Candy Yum Yum!!!

Growing up I would find those sesame seed crisps or brittle type things everywhere and anywhere. I have been craving them for the longest time, since I wasnt able to find them anywhere, I decide to make my own.

Was this ever a hit in my house.

For this recipe I used half regular sesame seeds and raw un-hulled sesame seeds, so one cup of each.

2 cups sesame seeds
1 cup sugar
1 cup light corn syrup
1/3 cup water
2 tablespoons margarine
1 teaspoon baking soda

Directions:

1. Preheat the oven to 350 degrees F.
2. Place the sesame sees on a large cookie sheet or jelly roll pan and toast them in the oven for 15 minutes.
3. Place the seeds in a 3 quart pan. Add the sugar, corn syrup, 1/3 cup water and margarine to the sesame seeds.
4. Bring to a boil over medium heat, stirring constantly.
5. Once it's come to the boil, continue to cook without stirring until the temperature reaches 270 degrees F on a candy thermometer or until a small amount of the mixture forms a ball when dropped into very cold water. (I don't have a candy thermometer, so I use the ball test.) This can take 15 to 20 minutes or more. The ball should be "plastic" in texture but should hold the ball shape.
6. Grease a jelly roll pan.
7. Stir the baking soda into the sesame seed mixture and pour into the jelly roll pan.
8. Spread the mixture with a metal spatula so it is 1/4 inch thick.
9. Cool completely and then break into pieces.

Lab-E-Shireen

I had Lab-E-Shireen one time in my life and I was IN LOVE! This Ramadan insha'Allah I will make it. I made a test batch today and it seemed to go down well. My Father-in-Law who never eats sweets had two bowls.



The recipe had called for nuts but I left those out because of my son's nut allergies.

Trifle!!!

My sister-in-law and her family as staying over for 2 weeks, so I made some desert for their arrival. Strawberry Shortcake Trifle. I decided to sneak in some bananas as well.

Yummy in my Tummy!!!

A food post.

I had to share because the day started out so lovely yesterday when I was greeted with this surprise for breakfast.

I <3 this egg and it <3's me!!!

Then I made some baked Aloo Kabobs (potato) and some "chicken Pakora" as my 3 yr old says. It's fried chicken really but since pakoras are fried he just associated everything fried as pakora.

Falooda

Yesterday was pizza day at my house, so I had the bright idea of making faloodas to follow the pizza. I don't even know why I thought of this because every time I eat pizza (my limit is 2 slices) I get SUPER full. Maybe it's all that cheese, who knows. Anyways we were full so I didnt make the falooda until I convinced my SIL that she was hungry..lol. I wanted to make them so badly.

Falooda is a popular east asian drink usually served in the summer time. I guess it's similar to bubble tea without the giant tapioca pearls.

Here is what you need. I should note this was not really the "traditional" version, more of a simple easy no cook version.

Jelly, Falooda sev (vermicelli noodles), Basil Seeds soaked in water for about 1 hour. Milk, Roohafza, and Ice cream. There is not real order. I didn't use nuts as a topping because my son is allergic and I didn't want to have any chances of using that EpiPen again.

Eid Mubarak

As-Salaam Alaikum,

Eid Mubarak to everyone who is celebrating today, and the same fore everyone is who celebrating tomorrow. We're going to be celebrating Eid tomorrow insha'allah. I am excited, because I get to dress up in sparklies. After Eid prayer we're going to lunch to a friends house, and I believe only the ladies will be there because the manly men are going to kill some sheep or goats.

Here are some pics of the late night cooking session which is begining as I type.


I know Lasagna is best served right out of the oven, but to be honest I don't feel like lifting a single finger tomorrow, so this will be put in the oven right after I finish this typing..:P

White Chocolate Raspberry Cheesecake

I did most of the prep during the day time, because I've been feeling really tired all day, and I wasnt sure if I could make it that late at night. I already finished 2 cheesecakes, started on the lasagna, and in a while I'll be doing Gulab Jamum. My mother in law is making kheer, Biryani, and I dont know exactly what else. I know I'm forgetting a few things, but it's okay. This is really not a lot compared to some houses I've been to, the do the works.

I should probably start cleaning up before I begin again. I'm one of those kind of people who can not cook in a messy kitchen. I HATE that. I clean as I go, always. If I use something I usually wash it right after. Anywhooo, off the work I go.
